The avacado salad is a mix of leftover veggies I had in the fridge- avacado, tomato, red onion, cilantro, purple bell pepper, jalapeno, lime juice, salt & pepper. This salad is different every time I make it since I use whatever is available. Corn or black beans would also be delicious additions.
To assemble this dish, I put some cooked quinoa on my plate, added my avacado salad, then topped it all with the tofu.
