The only change to Caitlin's recipe I make is that I use homemade cornbread. I can't seem to find a cornbread mix that I like at my grocery store, they all seem to have high fructose corn syrup. Here is my recipe:
Easy Cornbread:
1/2 cup white whole wheat flour
1/2 cup cornmeal or polenta
1 egg
1/2 cup 2% milk
1 1/4 t baking powder
