Grilled Foil Pouch Potatoes are now a staple dish in our house because they're so easy and delicious. In the summer, I love cooking the entire meal on the grill- that way I can relax outside and have a glass of wine instead of watching over the stove or oven.
The potatoes are crispy & smokey on the outside, and soft on the inside- Matt & I both like the potatoes a little charred. I used redskin potatoes here- but you can just use whatever kind are on sale or that you have on hand.
Ingredients for 2 servings:
3 small to medium potatoes
1/2 an onion
olive oil
seasoning to taste
Wash potatoes, then slice as thin as you can get them. Thinly slice onions, then put potatoes & onions in a bowl. Drizzle with olive oil, and sprinkle with your favorite seasoning (salt & pepper, McCormick Grill Seasoning, etc.). Mix well, then place potatoes & onions on a large sheet of nonstick foil- spreading them as flat as possible for even cooking. Securely roll up the sides & edges, making sure the pouch nice & secure for easy flipping.
Grill for about 20-30 minutes, depending on how charred you like your potatoes, flipping occasionally.
