You can see my ingredients below: tofu, veggies, lettuce, brown rice, stuff for easy Thai peanut sauce. You guys know I am obsessed with my peanut sauce, and even entered it into a recipe contest (which I didn't win, but that's besides the point, right?).
Ingredients (for 2 large servings):
1/2 package firm tofu (8 oz)
1 cup uncooked brown rice
your favorite veggie mix (about 3 cups)
Bibb or Iceburg Lettuce, 8-10 leaves
Easy Thai Peanut Sauce:
1 T peanut butter
1 T lime juice
1 T soy sauce
1 T honey
splash of sriracha (to taste)
Cook the brown rice according to package directions, set aside. Prepare peanut sauce by whisking ingredients together, set aside.
Heat some olive oil in a nonstick skillet, add the tofu and crumble with your spatula while it cooks. Keep it cooking long enough so the liquid drains, and the tofu starts to brown.
Add veggies, cook for a few minutes until they reach your desired tenderness. Add prepared peanut sauce & rice, mix together well.
Spoon filling into lettuce pockets, and enjoy!
