I would officially like to thank whoever it was that made the burrito bowl popular. Since almost any city has chain Mexican restaurants available like Chipotle and Moe's, it's easy to find a good burrito bowl. But in efforts to save money and calories, I love to make my own burrito bowls at home. The idea of a burrito bowl is simply to serve all of your favorite burrito toppings in a bowl and eat with a fork, instead of stuffing a tortilla. I call these "Anything Goes Burrito Bowls" because you can literally add whatever combination of veggies, beans, tofu, meat, cheese, or toppings you like. I usually use whatever happens to be in my fridge that week. To prepare your burrito bowl, cook up your hot toppings. The night I was doing these burrito bowl pictures, I used a combination of onion, green and yellow squash, and black beans. I just sauteed everything in a skillet with some olive oil, and seasoned with chili powder and cumin. If you are a meat eater, here is where you could also add your chicken or steak. I love Chipotle as much as the next girl, but you could make a delicious homemade bowl in probably less time than it takes to drive to the restaurant, stand in line to order, and drive home. Do it!
