This sandwich is pictured here with roasted root vegetables.
Ingredients for one fish sandwich:
4 oz piece of white fish (I used tilapia)
1 tablespoon flour
salt & pepper to taste
1 roll- I like Martin's Potato Rolls
1/4 an avocado
handful of shredded cabbage
Coat your fish in flour, then season with salt & pepper to taste. Heat about a teaspoon of olive oil in a frying pan, then cook fish about 5 minutes on each side until it flakes easily with a fork. Place the fish, avocado, & cabbage on the bun, and enjoy!
