The key to making grilled veggies is using a grill skillet or basket. We have both a grill skillet and basket that were given to us as gifts. Both items were fantastic purchases because we use them all the time!
Ingredients for 2 servings:
1 bunch asparagus
1/2 a medium sweet onion
2 servings of Melissa D'Arabian's lemon vinaigrette
1/2 box favorite pasta (I used Smart Taste Rotini)
Cut off the bottom tough part of the asparagus, then chop into about 1" pieces. Cut onion into chunks. Toss veggies in a bit of olive oil, then grill for about 15-20 minutes, or until they are done to your liking.
Make your lemon vinaigrette and set aside, then prepare pasta according to the directions on the box. Once everything is ready, toss it all together & top with Parmesan cheese. Try not to gobble it down TOO quickly!
