A couple of years ago, most of the grilling Matt and I did at home consisted of hot dogs and hamburgers. I didn't really have any ideas of what else to grill, so meat just seemed like the easiest option.
Last summer when I really started eliminating a lot of meat from my diet, I knew that I would need to come up with some vegetarian grilling options. I have by no means completely explored all the ways to make delicious grilled vegetarian dishes, but I think I'm off to a good start! Here are some of my ideas for those of you who are also looking to dive into the grilled veggie world.
Foil Pouch Potatoes:
These potatoes are a huge hit in my house, I make them all the time- so easy and delicious.
Need I say more? Same exact concept as regular foil pouch potatoes, but with yummy sweet potatoes instead.
Portabella Mushroom Melts:
No recipe needed for this easy grilled treat. Simply grill a portabello mushroom, top with hummus & cheese, then throw back on the grill for a minute to melt the cheese. YUM.
Such a simple side dish. I will be eating this a LOT this summer.
Another delicious dish. The lemony pasta concept would also be good with other summer veggies too!
