Post by Rachel: I eat granola bars everyday for a snack. So when I decided to try clean eating, I figured it would be a good place to start. I found a recipe for pumpkin bars on Clean Eating Chelsey. I’ve made some adjustments to make them a little easier to make. You can switch around the mix-ins to keep them interesting. The recipe says to sweeten the pumpkin. Since my mix-ins (chocolate chips and dried cranberries) have sugar in them, I don’t add any other sweetener. Pumpkin Snack Bars: Base -2 cups old fashion oats -cinnamon to taste -nutmeg to taste -one can pumpkin -optional 1/4 cup agave nectar to sweeten pumpkin Mix-ins -1/3 cup almonds -1/3 cup chocolate chips -1/3 cup dried cranberries Pre-heat oven to 325. Line square baking dish with non-stick foil. Put oats into mixing bowl. Stir in several heavy shakes of cinnamon and a few light shakes of nutmeg. Stir in the whole can of pumpkin. Fold in mix-ins. Pour into lined backing dish and flatten out. It looks pretty if you sprinkle a few raw oats on the top! Bake about 20 minutes. Let cool completely. Cut into any size bars that you want. I wrap mine in plastic wrap and keep them in the fridge. Enjoy! |
