Last week when I posted my weekly meal plan, I promised the recipe for my Mediterranean Fish with Pasta. You guys, this is so yummy, and ridiculously easy. If I remember correctly, I got the idea to cook fish in a tomato sauce years ago from my friends Dave & Tracy. I have made this time and time again throughout the years, it is a go-to dish in my house. The ingredients for the sauce are simple: tomatoes, olives, capers, onion, & cilantro. When my friends at Muir Glen sent me these awesome looking red & yellow fire roasted diced tomatoes to try, I knew that I needed to use them in this simple sauce. It's hard to believe these are canned tomatoes.

I love homemade salsa. Last summer, I was obsessed with taking the time to finely chop all the salsa ingredients and mixing them together: tomatoes, onion, peppers, cilantro, jalapenos... WHEW! This summer, I am exhausted just thinking about all that chopping.
Cue the canned tomatoes. I actually got the idea of using canned tomatoes in salsa from my sister Rachel, she figured out that the consistency of a canned tomato makes restaurant-quality salsa. You know the kind of salsa I'm talking about- the salsa you keep getting refilled at your favorite Mexican restaurant. Saturday: Out to Dinner During my trip to Charleston last weekend, I attended a Charleston Cooks! demonstration with my mom and sister. We weren't sure what to expect, my mom found information about the cooking demonstration online and thought it would be fun to check out. We knew that we would be watching chefs prepare southern food, and then get to taste the food afterwards. Southern food + cooking tips? Sign me up!
The Charleston Cooks! demonstrations and cooking classes take place at the retail store of Maverick Southern Kitchen in downtown Charleston. In addition to operating the store & classes, Maverick Southern Kitchen owns several restaurants in the Charleston area. I have been to one of their restaurants- SNOB- and loved it, so I had a feeling the food at the cooking demo would be delicious. Several months ago, I stumbled upon information about a recipe contest sponsored by the Pennsylvania Vegetable Marketing & Research Program. In order to stockpile some yummy recipes and celebrate PA Produce Month, the agency was calling for entries for the 2013 contest. Apparently they have been doing this for years, where have I been?
Veggies? Cooking? It seemed right up my alley, so I entered my Cabbage and Shrimp with Peanut Sauce recipe. Imagine my surprise when I was chosen as a finalist and invited to the 2013 Cook-Off!! Hello, hello! I am back from a nice long weekend visiting my sister in Charleston, South Carolina. My mom and I flew down last Thursday, and we got back this afternoon. Apparently Harrisburg did not get the memo that it is August, we came back to a dreary, rainy, 65 degree day. Coming home from vacation to terrible weather is the worst. Okay, let's talk about something positive and share some highlights from the trip, including some of the yummy food that I ate. Airport Eats: I grabbed this turkey sandwich from a deli at Baltimore Washington International, it was just alright. I was SO hungry by the time we ate dinner that anything would have tasted amazing. We had a bit of a delay on our flight out, so I took the opportunity to treat myself to some Pinkberry frozen yogurt. I ordered the original yogurt with dark chocolate shavings and toffee almonds. Of course it was delicious.
