Matt actually asked me yesterday why Food Only Better hasn't featured many food-related posts recently. The reason is... simply... I haven't put as much effort into cooking and meal planning as I usually do. When I'm just preparing foods for myself, it is easier just to whip up something quick. With that being said, I am definitely still cooking healthy meals for myself, don't worry! They are just super simple and don't require any sort of recipe.
Here is what I bought last weekend to get me through the week:
When I bought these ingredients, I had a few meals in mind, but I didn't have a specific daily plan like I usually do. I knew that if I bought some diverse ingredients, I could make a bunch of different stuff. The food pictured above isn't EVERYTHING I needed to prepare my meals, I had a few items left over from the previous week's shopping trip.
Here are a few of the things I threw together:
Cheesy Sweet Potato and Chickpea Salad via Carrots N'Cake
Random Leftover Salad
Grilled Cheese with Apple
Tempeh & Asian Veggie Stir-Fry
Edamame + Chickpea Omelet
So that was my week in food! Lots of yummy stuff to eat. This of course isn't everything I ate throughout the entire week, simply highlights of the dinners I prepared using the ingredients I bought. Hope everyone else had a healthy, happy week!
