Greek Pita Pizza

I didn't originally intend to make these Greek pita pizzas... I had regular hummus pitas on the dinner menu.  The hummus pitas are really good, but for some reason I didn't feel like heating a pita, cutting it in half, and stuffing it with various toppings.  It sounded much easier to just glob the hummus on top of the pita instead of trying to carefully spread it on the inside.  I know, in retrospect cutting a pita doesn't seem like that much work, but once I ate my Greek pita pizza I'm really glad I wimped out.

The best thing about this meal is that you can make it for yourself or for a crowd.  If you are feeding a crowd, you can easily add or subtract ingredients depending on what each person wants.  I use the "make your own" meal idea with my family all the time- no two people EVER choose the same thing.  It's ridiculous.  A meal like this saves a lot of frustration when cooking for picky people, that's for sure.   

The Greek pita pizza pictured here is topped with hummus, black olives, sauteed peppers & onions, feta cheese, and avocado tahini sauce.  So, so good.

Ingredients: 
One pita per person 
Homemade hummus (or store bought if you must) 
Feta Cheese 
Favorite toppings:  black or kalamata olives, sauteed peppers and onions, spinach, tomatoes.  
Favorite Greek dressing or avocado tahini sauce 

If you are using peppers & onions as a topping, sautee them in a little Greek dressing (I use Gazebo Room Lite).  Slather a pita with a big scoop of hummus.  Top with feta & other ingredients.  Put pitas on a baking sheet and bake at 400 degrees for about 10 minutes, or until pita is hot & cheese is melty.  Remove from oven and top with sauce.

The Greek pita pizzas were so good, I made a leftover pizza the next day with the remaining toppings.  I was out of the peppers & onions, so my day 2 version had hummus, feta, black olives, baby spinach, and avocado tahini sauce.
