I finally got motivated to try overnight oats when I was browsing through an overnight oats series on The Yummy Life- a recipe blog I read regularly. I used the basic idea from the Yummy Life to come up with an overnight oats recipe of my own- and it is now a favorite in my household. Believe it or not, my husband Matt even asks for this oatmeal, it is that good. I don't recall Matt EVER asking me for yogurt or oatmeal before this, let alone both together. Plus it's super convenient to just grab a jar out of the fridge in the morning.
Ingredients for 1 serving:
1/2 cup rolled oats
1/2 cup plain Greek yogurt
1/3 cup milk
1 tsp honey
1 tsp ground flaxseed
1/2 cup fruit
optional toppings: peanut butter, walnuts, almonds, or other favorite oatmeal topper
Start by adding the oatmeal, yogurt, milk, flaxseed and honey into the jar, then mix it together. Once you have the oatmeal/yogurt base in the jar, carefully fold in your fruit. I used strawberries & blueberries in this batch, but I have also used raspberries or apples in the past. I'll bet pineapple, mango, or blackberries would be great too. Don't worry about using frozen fruit- it will defrost as it sits in the fridge overnight.
