Happy Saturday! It's a hot steamy day here in Harrisburg and my four-legged furry friend doesn't like the heat, so I thought today would be a good day to do some writing from the comfort of my air-conditioned living room and update everyone on what I've been eating lately. Summer has the potential to be a diet bomb for many of us- ice cream, hot dogs, mayo-based salads- there are so many temptations! I try to find a nice balance by eating a ton of veggies and fruit, and then rounding out my day with a cool treat. Here are some of the eats I've been loving lately: Smoothies! I use the same basic smoothie recipe for all my smoothies, I just switch up the ingredients. 1 frozen banana + 1/2 cup frozen fruit + 1 cup milk + 1 scoop protein powder. A few of my favorites are my Raspberry Banana Smoothie, and my Pina Colada Smoothie. Lately, I have started adding a big handful of kale to my smoothies as pictured above- I can't even taste the kale. Nothing is better on a hot summer day than eating a smoothie that tastes like a milkshake. Overnight Oats. I make these a lot in the summer, eating a cold delicious breakfast is perfect on a hot day. Try it! I was really skeptical about eating cold oatmeal at first, but now Matt & I both love overnight oats. Mediterranean Salad. Now that tomatoes & cucumbers are coming into season, I am eating this salad all the time. It's delicious, nutritious, and is a complete meal when you add some rice, quinoa, or tofu. Marinated Grilled Veggies. At least twice a week folks. I have a ton of zucchini from Spiral Path Farm to use! I made these veggies on the 4th of July to serve alongside grass-fed beef burgers. Fake Out Tuna Nicoise Salad. This is what I had a few days ago for lunch. I swear I ate some sort of tuna salad four times last week. Yikes. Tuna Nicoise is one of my favorites so I'll make it if I have the time/ingredients, but I also like the simple combination of lettuce, tuna, olives, chickpeas, cucumber, and tomato. Yum. Frozen Greek Yogurt Bars. These are the Giant Food Stores brand. I still don't know how I feel about them, there are things I like and dislike. The good: low calorie (only 90!), 4 grams of protein per bar, great taste. The bad: a long list of ingredients including hard to pronounce additives. Hmm.
