Ingredients for two servings:
8-10 ounces of white fish (I like cod)
1 15 oz can Muir Glen diced tomatoes
1/2 a 15 oz can black olives, sliced
1/2 an onion, chopped
2 T capers
black pepper
half a box of your favorite pasta (I use Smart Taste)
big handful cilantro, chopped
parmesan cheese
Preheat oven to 400 degrees. In an ovenproof nonstick skillet, saute onions in a little olive oil until softened. Add tomatoes, olives & capers, cook for a few minutes until incorporated. Season with black pepper to taste. Add the fish to the skillet by pushing the sauce aside, then spooning the sauce back over the fish.
Move the skillet to the oven, cook for 20 minutes or until fish is opaque and flakes easily with a fork. While fish is cooking, prepare pasta according to package directions.
Once fish and pasta are done, divide pasta among 2 bowls, then spoon the fish and sauce on top of the pasta. Add cilantro & parmesan cheese, if desired.
